Red face Help! I can't find coconut milk.

Seems that 2 of the 3 recipes I picked to make this week take coconut milk. I'll be damned if I can actually find the stuff. Anyone have a hint as to where they might hide it? I tried asking, but obviously didn't find the right person.

Going to stop at a better grocery store tomorrow...hoping for a little luck so I can get my cooking done.

I normally find it in the same aisle as the Mexican food. That's also where they keep other exotic foods, like Thai, and they use a lot of coconut milk. Try checking there.

I agree with Christine, I know I've seen it on the isle with the Mexican food and I think I've seen it on the bakery isle as well.

You can also try the Asian section, I've seen it there before (since coconut milk is used in some Thai dishes).

[FONT="Comic Sans MS"]hi..i love dishes made w/coconut milk...in 'the old days' b4 sbd, i'd make a curry with it..chicken and or shrimp..served over rice of course...now, i just think about it. pls. do tell me what receipe you've found that's allowed withing the losing stage of sb..i am so interested. I've always found it in the so called 'asian' section of american grocery stores, or go to a asian market.[/FONTchoices~

Okay, so I'll scour the Asian section more thoroughly tomorrow.

Choices - There's a green chicken curry recipe in the SBD Quick & Easy cookbook. That's the one I'm going to try. I'll post it over in the recipe section for P1 entrees after I make it tomorrow...assuming I find the coconut milk.

I LOVE curry with coconut milk in it. I had just assumed there was no way it would be SBD friendly (high saturated fat content) so I'm very interested!

Keep in mind when using the coconut milk to make sure you use the light coconut milk.

Exactly correct, cottage. That's what the recipes call for and that's what I bought. Can't wait to try it!! But I realized that I forgot the eggplant, too. That's what I get for only mostly reading the recipe. Oh well...tomorrow perhaps.

Unfortunately, my grocery store is only carrying regular coconut milk. I wish they had light! They used to carry it.

Jetsetter..I am so glad you found the light milk..I havn't found it yet,or the receipe you mentioned..I did find a COCONUT CHICKEN RE. FOR PHASE 1 ON PAGE 204 OF THE SOUTHBEACH DIET COOKBOOK,the one that's a golden color..which looks,and sounds yummy. I am so anxious to hear how your rec.turns out...love curry! Take care, Choices~

An old trick from years ago, I used just lite milk, and mixed it with imitation coconut essence,premix in a glass to taste. Saved a lot of cals by doing this and it tased the same. But if you are using the canned stuff make sure you shake the can. The more solid the sound the more fat content it has.

I just have to say, "holy hotness, momma!!" My mouth is soooo totally on fire. A tablespoon of that curry paste goes a long way. However, it was dang fine stuff. Admission of guilt...I've never made, let alone eaten, a curry. Why? I dunno...

So here's the recipe (and posted on the P1 entree board, too)...

Chicken Green Curry
4 (1.25 cup) servings

Description (from the cookbook)
If you thought making a quick Thai curry at home was impossible, think again! With some store-bought curry paste, made from green chilies, lemongrass, and kaffir lime, you’ll be putting together an authentic, home-cooked curry in a jiffy. Look for the paste in the Asian foods section of your market. Serve this dish with sautéed vegetables or, in Phase 2 or 3, with brown rice.

Prep time: 15 minutes
Start to finish: 20minutes

Ingredients
1 (1/2-pound) bunch spinach (6 cups)
2 teaspoons canola oil
1 small onion, roughly chopped
1 (13.5-ounce) can light coconut milk
1/4 cup lower-sodium chicken broth
1 tablespoon green curry paste (from a jar)
1/4 teaspoon salt
11/2 pounds boneless, skinless chicken breasts, sliced into thin strips
1 (1-pound) eggplant, cut into 1-inch cubes
2 tablespoons fresh lime juice


Instructions
Cut tough stems from spinach; submerge in cold water and rinse thoroughly to remove any dirt.

Heat oil in a large straight-sided skillet over medium-high heat. Add onion and cook, stirring often, until softened, about 5 minutes. Stir in coconut milk, broth, curry paste, and salt; bring to a boil, reduce heat, and simmer for 8 minutes.

Add chicken and eggplant; bring to a low boil, then reduce to a simmer and cook, stirring occasionally, until chicken is no longer pink inside and eggplant is tender, about 8 minutes. Add spinach, stir, and cook 1 minute more. Stir in lime juice and serve.
