I've been eating wraps with leftovers. I found some yummy whole wheat tortillas that are only 1 point. Then I add some chicken or beef or whatever leftover I have from dinner, with lots of veggies and a little bit of dressing or some ff sour cream, for about 5 pts.

I hope others add their lunches here, I can always use more ideas.

I'm not doing weight watchers (I just count calories), but here is my lunch:
  • Sandwich of 2 oz turkey breast, 1 oz avocado, 2 tbsp hummus, 1 oz cucumbers, dijon mustard, and alfafa sprouts on FF multi-grain bread
  • Salad of 2 oz baby spinach, 3 oz cucumbers, 2 oz strawberries, sea salt, lemon pepper, and fig-infused balsamic vinegar
  • A couple pickled beans and some marinated mushrooms

The whole thing comes out 350 calories (8g fat, .5g saturated fat, 50g carbs, 7g fiber, 7g sugar, 22g protein). I had the same thing yesterday and it was awesome! I'm having it again tomorrow!

Mmmm, I'm actually eating lunch while I read this!

Sandwich: Hillshire farms deli select ham on Wonder Light Italian bread with mustard and 1 tsp miracle whip...3pts

Baby carrots....free!

Fresh Strawberries dipped in splenda.....1pt

Diet Dr. Pepper....free!....unusual for me, I normally don't drink soda

I have a special K bar in my bag for part of lunch, but I'm full so maybe it'll be a snack later this afternoon. So, a yummy, nutritional lunch for only 4 points...WOOHOO!!!

Roughly 2 cups of low fat cottage cheese... and cucumber slices. I utterly lack imagination when I pack lunches early in the morning!

Dinner, on the other hand, will be grilled chicken breasts, oven roasted red potatoes and salad followed by white chocolate raspberry creme brulee for dessert:

I make fat free sugar free white chocolate jello pudding and pour it (while still somewhat fluid) into four little ramekins over 6-10 fresh raspberries, then coat two with a layer of sugar (caution: Splenda burns) and heat them with a torch to carmelize the sugar. One box of pudding makes four ramekins- I cover the remaining two (without the sugar as it melts into the pudding) and add sugar and carmelize for the next night. I'll have to get back to you on the total points when I figure out how much sugar I add .

Oh yum! I want to make this. I'm going to have to pick this stuff up at the super market next week.

Let me know about the points.

Also, I don't have a torch, can you do it in the oven?

Sure! The traditional way of making creme brulee just requires a broiler feature on your oven. You can prepare everything up to the point where you use the torch (highly recommended just for fun!), then place the ramekins in a pan of water. The water should almost reach the top of the ramekins. Then place it under a broiler and keep a close eye on it. Because I am a total clutz, I put the ramekins in the pan, set the pan on the extended oven rack and then add water from a glass. Be very careful sliding the rack back in and you're all set!

***One quick step I almost forget- pop the ramekins with the raspberries and pudding into the fridge for a few minutes before adding the sugar and carmelizing through either method- the sugar carmelizes without cooking the pudding this way.

I modified this recipe from Sandra Lee's Almost Homemade show on the Food Network- she made it with lemon pudding and blueberries- also good but not quite white chocolate raspberry!

I have always used the pie filling directions to make these- that's how I filled four ramekins. Tonight, I used the regular pudding directions and filled six ramekins. With one tablespoon of sugar carmelized on top, that works out to 2 points per ramekin. My raspberries were a little fuzzy so I used banana cream pudding instead- very yummy!
