Lightbulb For the Love of Lentils...Cookies! ;)
Hey, I love lentils...they're slipping into tons of things I make lately. But it was stretching even my love a bit when I saw this recipe for Lentil Cookies! I posted it in the recipe forum because it seems so SBD friendly...anyone want to try making them and let us know what they think? I'm on P1 this week, but I think I'll be trying these next week...

Oooh...let me know what you think! It seems like they'll taste mostly like an oatmeal cookie or maybe a bit like an earthy kind of quick bread. Hmmm... Can't wait to hear what you think!

A lentil is a little legume - sort of like a pea but smaller. They cook faster than dried peas and don't need pre-soaking.

I made these today, Beachgal, and they're just so-so. Not bad, but not worth all the trouble. They taste a lot like oatmeal cookies, but they're pretty dry. I doubt if I'll make them again.
