Default Pancake Day tomorrow!

What are you having on yours?

And what (if anything) are you giving up for Lent?

I'm going to probably have a banana pancake, or I might take this tin of pineapple home that's been sitting on my desk for weeks and weeks and weeks!

As for the Lent thing, I'm debating between chocolate and... er... shopping (as in gratuitous spending).

I've found a cheese and lentil pancake recipe I might try, although I might relent and have a sweet one instead, if so it has to be hot cherries. I don't think I'll give anything up for lent this year, I'm still off what I gave up last year!

I'm having mine stuffed (a bit like cannelloni) - I'm going to put a aubergine/courgette/pepper/tomato mixture in them .... and then put a cheese sauce over and bake it in the oven. Then DH will have yet more pancakes with the traditional lemon and sugar or maple syrup.

I don't normally give anything up for Lent - I haven't really kept fully to my New Years resolutions so I suppose I might try for one of those.... maybe I'll give up cheese (again).

I shall be giving up cakes, biscuits etc as I did last year. However I shall resume come Easter Sunday I am not as strong as Helen. Although I am veggie already so I couldn't do that.

Um, I don't actually like pancakes much so I won't be having any - just a waste of calories where I'm concerned.

This year I'm giving up chocolate and any chocolate bits (e.g. choc chip cookies), sweets (except gum) and cakes. I do it every year to shift some pounds but come Easter Day Note i don't give up biscuits - that'd be like Sarah giving up cheese

For anyone thinking that flour eggs and milk are unhealthy, then you can use skimmed milk and rye/wholemeal flour (Ooooh rye flour pancakes )

OR

You can make them really balanced with some good protein by whizzing 2-4 egg whites (or 1-2 whole eggs) with 1/2 C cottage cheese with 1/2C oats. If you find this a bit thick, you can add water to make thinner pancakes. I'm planning on making cottage cheese pancakes until I remembered the Rye flour... I might do both!

I'm using wholemeal flour and skimmed milk. I've decided against savoury pancakes, I'm going to have some cauliflower soup and then go for the sweet stuff. I've got some cherries I'm going to heat up, and I've also got some marscapone in the fridge which I suspect will be very nice on top...

Shrove Tuesday, the last day before lent, it's traditional to eat erm... pancakes

My batter has been standing while I made my soup. I'm just eating that, then it's back into the kitchen for pancake fun
