Spicy Pecan Crusted Grouper

Recipe Name: Spicy Pecan Crusted Grouper
Ingredients:
1/3 cup chopped scallions
3 Tbsp. low sodium teriyaki sauce
1 large clove garlic, minced
1 tsp. minced fresh ginger
4 ( 5 or 7 oz.) grouper filets, size according to plan
1 cup fresh bread crumbs
1/2 cup whole grain cereal flakes, coarsely crushed
1/4 cup toasted pecans
1 tsp. ground black pepper
2 Tbsp. shredded fresh basil
Preparation:
1. In (9 x 9 inch) baking glass dish, combine scallions, teriyaki, garlic and ginger. Place fish in marinate and turn to coat both sides. Cover and refrigerate 1-2 hours.
2. In pie plate combine bread crumbs, cereal flakes, pecans and pepper. Remove grouper from marinade and discard the marinade. Press each filet into the crumb mixture to coat all sides.
3. Coat large non stick skillet with no stick spray and place over med high heat until hot. Add grouper and cook for 3 minutes or until golden brown on the bottom. Mist the top of the filets with a cooking spray and flip and cook another 3-4 minutes until grouper flakes easily when tested with fork.
4. Sprinkle with basil
Makes: 4 servings
