Default vegetarian

Does anyone have any vegetarian ideas for 1 week? I am having trouble planning my meals. Even a simple gold plan that I can substitute the meat or fish for?

I use a lot of meat substitutes for the meat suggestions. I just go by the serving sizes on the packages if nothing is listed in the booklet. I also have found that many recipes in vegetarian cookbooks and Vegetarian Times can easily be used under the plan.

As for some easy ideas off the top of my head (check plan book for sizes)-

Whole wheat pasta with pasta sauce with crumbled tofu and spinach added to the sauce ( 1 starch, 2 vegetable, 1 protein)

Bean and cheese burrito (1 protein, 1 dairy, 1 starch)

Veggie burger on 1/2 english muffin (1/2 protein, 1 starch and any veggie on top)

Tofu and vegetable stir-fry over rice (1 protein, 1 starch, 2-3 vegetables)

Veggie quesadilla (1 starch, 1 dairy, 1 vegetable)

That's all I can think of off the top of my head, I'll check some recipes and post again later. Hope this helps for now.
