Chicken Tortilla Soup recipe
This crock pot recipe is delicious!
1 lb chicken breast, baked and shredded
1 can chicken broth
2 c water
1 can enchilada sauce (read the labels, some of these are high in fat and cals, others are not)
1 can diced green chiles
1 can diced tomatoes
1 medium onion, diced
1 clove minced garlic
1/2 bag frozen corn (I substitute diced green pepper)
1 t salt
1/5 t pepper
1 t cilantro
1/2 t cumin
1 t chili powder
1 bay leaf
Throw all of the above into a crock pot and cook on low 7-8 hours or high 3-4 hours.
You can also cut a whole wheat tortilla into strips and bake them in the oven until brown. Sprinkle on the soup, along with a dollop of fat free sour crem if you want.
