breakfast: 3/4 cup oatmeal with brown sugar splenda and cinnamon
m. snack: banana and one blueberry corn muffin
lunch: salad/lite ranch/grilled chicken strips; apple; carrots & celery; FF yogurt
a. snack: apple, banana and one blueberry corn muffin
dinner: I used 11 WTP's at dinner and everything else was core...chicken breast stuffed with cheese and herbs in a mushroom sauce - yummy! plus, a couple of small pieces of bread, lentil soup, and veggies.

Breakfast: Oatmeal made with skim, splenda, and 1/2 cup homemade applesauce cooked in

Lunch: Sirloin burger (3 points for bun); chicken pasta soup without the pasta!

Dinner: Chicken burrito bowl (chicken, diced tomatoes, lettuce, hot sauce, pinto beans, guacamole, cheese (3 points) and brown rice cooked in chicken broth at home)

Snack: Hot tea with skim and splenda and a Natural Ovens oatmeal raisin cookie (2 points)

Emily, polenta is cornmeal and water. There are a few recipes here for different variations, but basically here's what I do: take 3 parts of boiling water to 1 part of cornmeal. Stir it a little and it'll thicken up and make a sort of dough. Then drop it by spoonfuls onto a griddle or nonstick skillet and make something that looks like pancakes. You can grease a spatula and smoosh it down. Cook on one side, flip it over and cook the other side, and enjoy! I usually add chopped jalapenos or garlic ... something to trick it up. It's very good with black or pinto beans. You can even make a crust for a tamale pie. Check out the recipe section and do a search on "polenta" or "corn pone".

Oh and you can also buy commercial polenta. It comes in a roll like sausage and you just cook it. I prefer to make my own fresh.
