My first day back OP:
Breakfast: Oatmeal with splenda
Snack: apple
Lunch: Egg omelette with sliced ham, 1/2 baked potato, 2 slices rye bread with margarine.
Dinner: Not sure yet.
Now, should I be counting any points for having the 1/2 baked potato and the 2 slices rye bread as well?
No, I don't have to points booklet.

The baked potato is Core, but the bread and margarine isn't, so you'd count the points for the bread and margarine.
