Veg*n Core?

  • Does anyone here follow the Core program and also follow a vegetarian or vegan diet?

    I have found it's hard to keep both restrictions in check, since as a vegan, I require alternate sources of protein such as nuts and seeds, and I like to eat hummus and whole wheat bread periodically. Should I just count points for these?

    Also, I know many people who use FF/SF jello for their desserts of choice. Does anyone know a veg*n alternative to these desserts?

  • Hi, I make a fake hummus that's Core. Chick peas, garlic cloves, lemon juice,
    salt and pepper all ground up in a food processor. This leaves out the tahini
    which is the higher caloric ingredient. You might want to try this since it's yummy, high in protein and doesn't use points because it's completely Core.I don't, but there's no reason why you couldn't add some of your daily olive oil to the mix to make it closer to real hummus.
    Good luck! As far as the Jello desserts, I can't think of anything. Do you use dairy, because if so there are the instant puddings that don't have gelatin in them.

    My family is lacto-ovo vegetarian, but I am doing the CORE menu..... If you are going vegan, this will be rough!! You can have many of the Morningstar/Boca products (but check the list!!), tofu, soy dairy foods-- TVP is okay for CORE (although it's not on the list, I checked with my group leader and there is one TVP based item - so she okay'ed it).

    There are non-gelatin based jello-ish products: agar-agar and kanten (haven't tried them) -

    Hats off to you - I am eating eggs, ff dairy and lean meat (servings for one!)
  • So far, what I have been doing is following the main Core plan, but I count points for extra protein sources (such as nuts, seeds, nut butters, etc.) These are an essential part of a vegan diet for me. I also count points for healthy breads, such as Alvarado St. Sprouted Grain bread or Ezekial bread.

    In answer to one poster, no I don't consume dairy. I don't consume anything that comes from animals, except for the occasional honey (although I believe that isn't Core to begin with). I find it isn't hard to do if I'm willing to make sacrifices. I'm not SO strict that if someone offers me a little popcorn with cheese I will laugh in their face, but I obstain from most animal products on principle.

    I have been this way since I was 14, turned ovo-lacto for a few years, and now I'm back because I feel healthier and I'm against the factory farming industry. I believe milk is for cows and babies, not for me. But each to his/her own, right?
