Menu for Sunday, May 8

  • I decided on King Ranch Chicken casserole -- the chicken is cooking now. I'll use chicken, thin corn tortillas, cream of mushroom soup, FF cheddar, and Ro-tel tomatoes, so it should be mostly low in calories and fat. I will probably keep a small bowl of chicken for myself and eat that with cheese and Ro-tel tomatoes.

    l--tuna salad and grapes
    s--banana milk shake
    d--bbq chicken

  • Hey, I didn't even notice we didn't have a menu thread. I've been STARVING since last night. I do not know what my problem is.

    Breakfast: Oatmeal made with skim and 1/2 cup homemade appelsauce

    Lunch: Can of Progresso Lentil soup

    Snack: FF cottage cheese and peaches

    Dinner: Core Cornmeal Chicken on the GF Grill, mixed field greens salad, fresh green beans, and a baked potato with FF sour cream

    Dessert: Don't know
  • Here is what I had today:
    130 AM 1 1/2 cups chicken soup homemade consisting of chicken breast, mixed vegetables frozen, 1/2 bag chopped broccoli, 1 can of diced potatoes. cottage cheese with pudding and pineapple, 1 can of carb clever peaches, 1 apple

    on the way home from work I had an apple and 1 serving FF Pringles, my commute is close to 1 hour.
    After church I had 3 meatloaf muffins and some WW strawberry pie w/o the crust.
    Before going to work I am having salad with chicken strips, 2 boiled eggs, 1/2 cucumber and FF catalina and I will have another serving of strawberry pie.
    On the way to work at 10 I will have some grapes.
