Wonderful Wednesday Menu, April 13, 2005

  • Breakfast: Oatmeal made with skim and 1/2 cup homemade applesauce

    Lunch: Gulf shrimp salad (purple onions, hard boiled egg, avocado, cucumber, red cabbage) with FF honey dijon dressing

    Snack: Chocolate banana smoothie

    Dinner: Mixed field greens salad with mushroom and tomatoes, Leftover smothered barley chicken, and green beans

    Snack: SF/FF lemon pudding
  • Breakfast: Light string cheese, coke (4 WPAs)
    Lunch: FF cottage cheese, cantaloupe, strawberries, pineapple and a small salad with FF 1000 Island
    Dinner: Grilled chicken breasts, steamed vegetables (broccoli, onion, mushrooms), and WW spaghetti with diced tomatoes and garlic
  • b: malt o meal w/strawberries, milk
    s: applesauce
    l: water
    d: crockpot mixed beans and turkey ham, salad, milk

    I have weigh-in tonight, and I fear it might be a bad one...

  • Kathy, you eat so little starch that I'm surprised the weight isn't just falling off of you.

    Fingers crossed for you Angela. Don't drink TOO much water before your weigh in. Gotta make sure you ohave time to get rid of it!
  • Vickie, it would if I could ditch the coke and up the water. That is absolutely my worst enemy right there.
  • B - oatmeal and apple with milk
    S - carrots and ??
    L - polenta and bean pie with spinach on the side
    S - not popcorn today - yogurt something I think
    D - pasta with eggplant sauce and cottage cheese
    S - rice pudding for points probably
  • Breakfast: 1 packet plain instant oatmeal, decaf w/light cream

    Lunch: Froufie famous soup (found a container in the freezer - yippee)
    2 plums

    Snack: veggies w/lf ranch dip (carrots, celery, brocolli, cauliflower, grape tomatoes)
    1 large red delicious crunchy sweet apple

    Dinner - who the heck knows? And this has been my downfall this week - need to plan or else! If i'm going to hospital will try to pick up something healthy on the way!

    Angela - good luck w/your weigh in - hope you do well. What does malt o meal taste like? We don't have any here and I might buy some in US when shopping.

    Kally - there is a "brown" rice pudding recipe somewhere in here that you can have and not use any points!!

  • Malt o meal is basically cream of wheat/farina with a little malted barley in it. It tastes pretty much the same - just a little "nuttier" and not quite so smooth. I prefer it to farina any day.

  • Angela, I've never tired Malt-o-Meal but love farina. I'll have to give it a try. What do you put in it?
  • Frouf, I have a brown rice pudding recipe. I'll post it under the recipes thread. I haven't tried it, but it's all core.

    B: shredded wheat, ff milk, kiwi fruit
    L: Half a Wendy's baked potato topped with leftover cowboy stew, side salad with ff French (weird to be full on half a potato!?!?)
    S: Plum
    D: Avocado-cucumber toss, spinach & mushrooms, Onion-mustard crusted pork loin
    S: ff yogurt
  • b: cereal w/ ff milk
    l: tuna w/ ff mayo and small salad w/ ff french, 1 piece ww bread (1 pt)
    s: ff cappucino, apple
    d: white chili
    s: either sf pudding or popcorn
  • Just a note:
    I made the White Bean Chili (posted in Core recipe thread) but made some changes. I used 2 cans of white beans instead of just one. Then I added chili powder, cumin, and garlic powder. Couldn't tell you how much, but it really added great flavor to the recipe. A really good quick supper!
  • Vickie, when I make my malt o meal, I usually make it on the stovetop. Then I stir in 2 t. Splenda and a splash of skim milk. Then I slice either a banana or some strawberries on top. Mmmm.
