Default Menu 01/24/08

Well this is day #4 of being OP and I'm already down 5.8 lbs!!! YAY!!! Apparently I'm doing something right... especially since TOM is visiting me atm! Here's my menu for today

Breakfast:
Shredded wheat
Skim milk
Banana

Lunch:
Baked potato
FF sour cream
FF shredded cheese
Veggie salad w/ salsa

Dinner:
Southwest chicken soup
Salad w/ salsa

Snacks:
Orange
Popcorn
Apple

Great job - Keri - you are doing so well! (so what is salad w/salsa like anyways? not sure I would like that??)

So far:

Breakfast: 1 c. guardian hi fibre cereal, 3/4 c. lactose free milk, decaf w/cream

Lunch: Okay found a Lean Cuisine Spa frozen meal in freezer at work - Thai Chicken - actually pretty good - chunks of chicken w/brown rice and veggies in coconut milk sauce (the sauce made it edible!) - only 250 cals! (and 5 pts according to the package)
-also found some crispy mini rice cakes in my drawer!


Snacks:
2 tangerines
1 cup red cherries

Dinner: tbd

Thanks good luck on your meals today!

my salads usually have no lettuce since I can hardly find any good looking lettuce around these parts lately! If I see some usually some green leaf lettuce goes into it with the following items as well.

Cauliflower
Broccoli
Carrots
Radishes
Cucumber

Then I make my own salsa with some fresh tomatoes, onion, garlic, jalapeno, cilantro, and some cumin and I'm good to go!

I think the key to making this salad good is to use fresh ingredients and to have a good salsa. If you can find a store bought salsa that you typically like with chips I would give it a try on a salad!

I usually shred up my veggies in tiny pieces to make it more appealing hehe, but sometimes I get lazy and just cut them in bite size chunks.

Something I've noticed today is that my stomach is apparently realizing things are finally different and those hunger feelings are coming back in the morning hours. I haven't been eating a snack between 8-12, but it looks like I'm going to have to start working one in to make sure I don't go crazy at lunch or after lunch

Our local fruit/veggie stores makes an awesome fresh salsa - w/tomatoes, onions, peppers, cilantro - might give it a try! Thanks for the info!

I hope you do like it I do!! I've also mixed salsa with FF ranch too and it makes a wonderful alternative to just regular old ranch
