Default Help, need sweet potato ideas...

Hi all. I have been assigned to bring sweet potatoes to Thanksgiving dinner. What we usually do is bake them with marshmallows on top, the traditional. Does anyone have a core recipe involving sweet potatoes that would be yummy enough for "normal" people to eat?

Hi Angela. I didn't find any with marsmellow but here are a couple from Barbo's Diet Kitchen. There was also a sweet potato custard that I didn't print. You should check out www.barbosdietkitchen.com. I just searched for Core Sweet potatoes.

Candied Sweet Potatoes

side dishes | Carry on with tradition: Serve these sweet, delicious potatoes at your Thanksgiving dinner.

Ingredients

1 serving cooking spray, (5 one-second sprays per serving)
1 1/2 pound sweet potato(es), peeled and cut into 1-inch chunks
8 oz canned crushed pineapple in juice, undrained
3 tsp McNeil Nutritionals SPLENDA (R) No Calorie Sweetener
1/4 tsp ground cinnamon

Instructions

Preheat oven to 425ºF. Coat a 2-quart casserole dish with cooking spray.

Place potatoes in prepared dish. Combine crushed pineapple, Splenda and cinnamon in a small bowl; add to potatoes and toss until well mixed. (Note: You can use canned sweet potatoes in water to save time, if you prefer.)

Bake, stirring after 30 minutes, until sweet potato mixture is bubbly, about 45 minutes. Yields about 1/2 cup per serving.

I really wouldn't recommend the next one from a Core point of view. It has tweaks and you can use your points but it also violates the 2 or more non-Core ingredients rule. That is, that if a receipe uses 2 or more non-Core ingredients you are supposed to count points for the whole serving. You'll have to decide how you'll count this if you make it.


Praline Yams (Core + 0.9 Points)

2 tablespoons water
1 teaspoon coconut extract
3 1/2 cupy (18 ounces) diced cooked yams or sweet potatoes
3 tablespoons (3/4 ounce) chopped pecans **
2 tablespoons flaked coconut (dried, sweetened) **
2 tablespoons Brown Sugar Subst. * (see below -- use only 1/8 - 1/4
of recipe, or to taste)
2 tablespoons pourable Splenda
1 tablespoon all purpose flour **
1 tablespoon reduced calorie margarine -- USE FF margarine

Preheat oven to 350 degrees. Spray and 8x8 inch baking dish with
butter flavored cooking spray. In a large bowl, combine water and
coconut extract. Stir in yams.
Spread mixture into prepared baking dish. In a small bowl, combine
pecans, coconut, Brown Sugar Twin, Sugar Twin, and flour. Stir in
margarine until mixture is crumbly.
Sprinkle crumb mixture evenly over top yams. Bake for 30 minutes.
Divide into 6 servings.

Core + 0.9 Points:

pecans, coconut, flour = 0.9 Points per serving of 1/6 recipe

133 calories, 5 gm FA, 2 gm Pr, 20 gm Ca, 58 mg Sodium, 21 mg Cl, 3
gm Fi
Diabetic: 1 St, 1 Fr
Hint: One (29 ounce) can of yams in syrup, rinsed and drained is
equivalent to 18 ounces cooked "from scratch" yams. (TWEAK -- I would
prefer fresh cooked when possible.)

I just bake them whole or mash them. Can't stand candied sweet potatoes. EEEWWW
