This is the tomato salad I always make when my Greek brother-in-law visits with my sister. You have to count the carbs in the tomatoes but with tomatoes fresh from the garden it is really tasty. Unusual in that you don't use vinegar on it.
Slice ripe tomatoes in wedges.
Chop up a small onion and sprinkle over tomatoes.
Dice up some Feta cheese and sprinkle that over along with some Greek kalamata olives.
Sprinkle with salt and pepper and drizzle with a good quality olive oil.
Looks very pretty on a shallow serving dish.
You can add sliced cukes if you like them.
