Roasted Radishes
I just remembered about these! They were from the Keto Diet, but can be used on the SBD. My DH & I don't really like radishes, but made like this, they were surprisingly good.
1-2 bunches radishes, washed & dried, greens removed
Dressing
1-2 Tablespoons olive oil
2 cloves garlic, more if you like garlic
1/2 tsp. pink Himalayan salt, or sea salt
pinch freshly ground black pepper
1 tsp. Italian seasoning
Preheat oven to 400*
In small measuring cup, add oil & rest of dressing ingredients. Place radishes in large bowl. Toss with dressing to cover.
Empty bowl onto parchment paper or foil lined baking sheet.
Roast, uncovered for about 15 minutes. Turn & keep roasting about another 10 minutes.
Times are approximate. Just check them. They don't get really browned. The less radishes you have, the less time.
