Cannellini beans and tomatoes

  • Well ladies,

    I cooked myself some chicken tonight and was trying to figure out a side dish. So, here is what I made and it came out delicious.

    1 can cannellini beans, drained and rinsed
    1 can diced tomatoes (I used italian flavored but there was no added sugar)
    1/2 onion, chopped
    2 cloves of garlic,chopped
    Olive Oil
    Onion salt
    Basil
    Parsley

    Cook up the garlic and onion in the olive oil just until the onions are starting to get transparent. Add the beans. Stir. Add the tomatoes. Stir. Add onion salt, basil, and parsley to taste. Bring to boil. Reduce heat to low and cook for 10 minutes or so.

    It came out really good. I topped it with a pinch of parmasean cheese.

  • I think this sounds good and I am going to add a jalapeno for a little heat.
  • This does sound good and very simple! I might try it with a little zucchini too!
