So i want to start breakfast lunch and dinner threads where we share what we eat and discuss our ideas about it if inclined. Im just having breakfast now. The others will come later but i don't mind if someone else wants to get the lunch and dinner ones going first if you are at that point already.

  • Dinner was freakin' off the charts fantastic! Almond-Crusted Tilapia and Broccoli Swiss Gratin. Low carb, high protein, and only 368 calories!

    Just....wow.

    I also had a small dish of cantaloupe which was just the perfect flavor for this wonderful 80 degree day.
  • I had tuna fish cakes with a corn relish, topped with some greek yogurt and a side of Brussels sprouts. Deelishus.

  • This is fun already. Great to read about your eats. And novas you reminded me of a meal i had in France which was trout with almonds, a classic french dish i think.

    Anyway i had roast vegetables (1 potato, 1 large piece pumpkin, 3/4 beetroot) with 1/2 cup Ratatouille (A french vegetable stew of aubergine, zucchini and tomatoes) and 1/3 cup yoghurt.

    Home grown but defrosted mango. Probably less than a cup and maybe more than 1/2 cup. We're well past mango season now but i have still got leftovers in the freezer from the year before.
  • I have been totally craving Chinese but the restaurant stuff is a million kinds of unhealthy. So I made homemade sesame chicken (I followed this recipe but used less honey) and served it over sautéed broccoli slaw. Yumyum.

  • Novus, i'd eat chinese, even if it does contain msg. I don't eat it often enough for it to make me sick.

    I ate a lot tonight - too much actually. But of course it was cabbage that got left on the plate.

    1/2 loaded cup stewed pears
    1/2 cup homemade yoghurt

    1 apple that needed eating. And i think i had forgotten i'd just earn the pears. i ate this while i was cooking dinner.

    3/4 cups of boiled sugarloaf cabbage with 1 tsp butter
    1 tbsp grated parmesan
    1/2 cup ratatouille
    I mixed in 1/2 cup canned peas
    on top i put 1 boiled egg.
  • Its a seafood restaurant, Most of their food is fried so like I said I was a bad girl yesterday for my dinner option.

    Today we're having Stoffer's Green Peppers for dinner
  • Dinner? Oh, it was only the most fabulous salad I've ever tasted!

    Artisan lettuce plus
    Sage-Garlic-Rosemary Marinated Chicken Breast (this recipe) plus
    goat cheese that I rolled into tiny balls, coated with crushed pecans & almonds, then fried until it was brown and gooey plus
    strawberries, blackberries, and blueberries

    And for the dressing I mixed together balsamic dressing with a teensy bit of homemade strawberry freezer jam.

    OMG. Amazeness.
  • Oh my god novus that sounds frickin' awesome! My dinner wasn't all that exciting. Grilled mackerel (we caught it), steamed mixed veggies and steamed broccoli.
  • After a day out and fatigued, i didn't have much energy for anything but the most easy. I stopped by the supermarket for a few things.

    So I had 80grams of spaghetti
    1 tsp olive oil
    45grams of hot smoked salmon

    I find it amazing how little food satisfies me now. Its great.

    Before all that, i had 1/2 glass of wine. I haven't drinking my daily wine for several weeks now. But when you are tired its nice.
  • Goulash and Garlic Bread
  • 3 cups pumpkin soup as below
    1 glass of white wine

    Pumpkin soup
    1/2 a big round pumpkin about 1.5 kg, cut into chunks
    3 potatoes, scrubbed but not peeled, quartered
    celery including tops. At least 3 stalks.
    2 onions, quartered

    a knob of ginger, peeled and cut into quarters. (about 1 tbsp)
    some ground allspice but you could use the whole ones.
    1 litre water
    salt

    Boil the vegetables for about 15-20 minutes. Remove the tops of the celery and don't leave too much celery stalk in because it can impact the flavour negatively if too much of it.
    Blend with a bamix. Adjust salt to taste.

    If the soup is reduced, you can add some milk or a little cream or even yoghurt. Do not heat on stovetop if adding yoghurt as it is likely to curdle.
    If you are going to save it, its probably best to only add any dairy just before serving, although if you wish, you can add less water and include the milk from the beginning.
