  • creamy maple rutabaga bisque
    ahhhhh comfort foods.....
    CREAMY MAPLE RUTABAGA BiSQUE



    so...on sunday...dh wanted me to cook a roast beef in
    the crock pot...so i made an eye round roast with
    potatoes for him and rutabagas for me!!

    i carefully put his potatoes all the way on one end
    and my rutabagas on the other!! no baking cookies
    between the tubers!!!



    it was a super simple supper...i paired mine with a
    small side salad to get my veggie allowance in...



    SEE HOW PRETTY THEY ARE!!!!

    so today....i thought...hmmm....what to do with
    the leftover rutabagas????

    why...puree them....is what i heard LizR whisper in my ear!!!!

    so that i did....

    i added 2 cups slow cooked rutabagas,
    with 1/2 cup chicken broth
    a little curry spice, a dash nutmeg
    and 3 tbsp walden farms maple syrup!!!!
    into the magic bullet!!!

    poured into my bowl, gave it a little reheat
    in the microwave....and since i had not had my
    milk allowance for the day, added a little milk into
    the bowl, and gave it a swirl!!!



    oh my....golden goodness!!!!!!!
    SWEET ~ CREAMY ~ RiCH ~ MAPLE HEAVEN GOODNESS!!!!!

    SPiCY TACO TORTiLLA SOUP

    what to do with your cauliflower puree???
    roasted cauliflower and garlic.....
    blended with chicken broth until smooth...
    add some taco seasoning, roasted red peppers and a few jalapenos!!!
    blend til smooth...and reheat if necessary in the microwave.







    i topped mine with the pizza protein chips i ordered from nashua nutrition!! i only used 1/2 packet today....
    i picked out 8 good chips...and saved 12 chips for another time....
    then crushed the broken ones to put on top of my soup!!





    ***** optional****** i will sometimes substitute fat free sour cream for my milk allotment...but ASK YOUR OWN COACH before doing so...



    as you can see...the chips are GREAT for dipping!!

    the Proti-Diet Grape Drink!!!
    i LOVE this!!!

    i added 1 packet of KNOX GELATIN and 2 cups water
    for 4 ~ 1/2 cup servings!!! i can have anytime!!!



    LOVELY PURPLE COLOR AND DELICIOUS GRAPE FLAVOR

    i know lots of IPeeps have made the cauliflower rice....however, instead of grating it...which is what i was going to do, as i was getting my box grater out of the drawer, i saw my old cheese grater....you know the kind....like they have at olive garden when they come around asking if you want cheese....with everything!! but i digress....anyway, i thought hmmmm....so i popped in a few small pieces of cauliflower and churned away...and into the bowl dropped the most perfect tiny pieces of cauliflower...very tiny almost grits size....(hmmmm cauliflower grits....another day).....it was like tiny rice!!



    maybe someone else already tried this...but i never knew and love how easy it was!!



    so i heated the pan...and used 1/2 tsp coconut oil....and added all the cauliflower and sauteed until lightly browned in a very dry pan...didn't add any other thing except salt and pepper...and OMWORD.....IT TASTED LIKE COCONUT RICE or toasted coconut vermicelli!!!!!



    i got so excited i forgot to take pics of the ham and peppers sauteing in the other pan!! hahaha but i sauteed some red and orange mini bell peppers sliced and some green onions in a pan with 4 oz. diced ham...once lightly browned i de-glazed the pan with about 1/4 cup 0/0/0 chicken broth. in the end, i plated it on each side, but ate it mixed!! i topped it with some fresh parsley and thyme from my herb garden!! whooop whoooop!!! YUM!!!!!!!!!!!!! i love it when i make something soooo good for me that tastes sooooooo delicious!!!

    so i made it again, and took some photos of the ham and peppers and green onions in the pan!! it was just as good as before!! this is a keeper recipe!!!!

    I LOVE that IP makes me THINK OUTSIDE THE BOX...and cook in ways i never imagined doing!!!
