  • I'm back and cooking! I need some new ideas for the cool weather.

    Tonight's dinner plan is crockpot white bean soup with rosemary and greens. Some roasted acorn squash and low fat or fat free veggie sausages on the side to round out the meal.

    Tomorrow I'm making one of my quick skillet meals with cabbage, crumbles, fire roasted diced tomatoes, & peppers
  • I'm making a vegetarian version of Taco Bake for supper. It will be a nice way to use up some salad greens and a will give me lunches for the next couple of days, too. I'm starting to get tired of my usual tossed salad for lunch.
  • If my day doesn't run away with me, I am planning salmon burgers with the very last of the Swiss chard from the raised bed. I have baby carrots dying to be roasted and served with ginger - gotta use up stuff before I blow this joint!
  • I'm making black bean soup for myself for lunches; buying a ham....for ham dinner tonight, using the bone to make granny and papa ham and bean soup, and then more of the ham to make hoppin' john for supper tomorrow night.
  • grilled cheese and tomato soup for us!
  • roasted whole chicken, sweet snap peas and a salad with tomatoes and avocado. There will be fries for the rest of the family.

    But I'm actually going to have roast chicken breast with green beans and a salad. Not exciting, but I'll be able to have the chicken all week.

  • Chicken-fried venison steaks & 1 baked potato w. gravy I'll make me 2 cups of Coffee later if I get hungry, because I don't like the taste of so it takes away my cravings for desserts & snacking.

  • Hi, Dee! Are you following the South Beach Diet? I ask, because your menu is totally off-plan, besides the fact that there are no vegetables included. It does sound good, though!
  • I was going to have sausage sauteed with vegetables, but changed my mind and will have a baked sweet potato + chard, sauteed with onion, garlic and some portabello mushrooms, with a bit of parmesan cheese sprinkled on top.
  • Curries! I love the cold weather because it means it's a good time of the year for curries again!

    Paired with some veggie sticks or sauteed kale it's yummmmmy. Heck, you could even add in some extra veg to the mix!
  • We are anticipating a storm so I'm making a pot of hot and sour soup, double the broth and shrooms. It's a favorite around here.
  • I thought i'd try kissyjoy's Chicken and Spinach dish. I've never made it and am always interested in trying new one-dish meals.

    A question. This, and many other recipes here, call for frozen spinach. Is that because fresh spinach is too fragile for long cooking times? I don't care for frozen spinach and never keep it in the house, but I always have fresh spinach. (The question being, could I use fresh spinach in this recipe?)
  • Maybe people are just more likely to have enough frozen? Spinach does cook down a ridiculous amount. I don't think it would make a difference as long as you could figure out a good amount.

    So I forgot that I needed mushrooms for hot and sour. Tonight will be a stir fry instead and hot and sour soup will have to wait for Friday.
