Almond flour uses?

  • i bought a bag today at trader joe's but what are some good recipes you've tried using it?
  • Dottie's Pumpkin Pound Cake. I put cream cheese frosting on it. It's SO good, and really moist.

    You can also make a mixture of parmesan and almond flour to bread chicken and then bake or fry it to make chicken strips. It's better than just using straight parmesan in my opinion. It's good for making a different version of the one minute muffin, too.

    A lot of them use almond flour and you can adapt them to low carb by using Splenda instead of agave nectar (I think agave nectar is a sweetener).
  • There are several almond flour recipe threads on "Low Carb Friends" site under the group "Low Carb Recipe Help & Suggestions." I also love Lowcarbdude's almond flour pancakes - delicious - I think the recipe's on the "Recipes from 'What's for Dinner?'" thread on this site too.

    I made a chocolate chip one minute muffin using almond flour this week - recipe's on "Tweaking the One Minute Muffin" thread on the Recipe Help/Suggestion board at "Low Carb Friends." Not induction friendly with the almond flour and the sugar-free chocolate, but really good.

  • I forgot to mention "Bob's Red Mill" web site. There're lots of recipes using almond flour; I haven't used them, though, so I can't recommend any of them.
  • actually, last night I tried out a biscuit recipe made with almond flour. I made a breakfast sandwich out of them this morning and it made me happy

    the carb count may or may not be correct. my bob's red mill label says 3 net carbs per 1/4cup, so i don't see how the biscuits can be only 2.5g.

    i also used it last night to toy around with the one minute muffin recipe, and then i made that into tortillas for my chicken quesedilla. it turned out more like the chalupa bread from taco bell, so i just ate it open-faced like a tostada. still very good!
