  • I am sure there are many threads related to this but I don't have time to sift through the hundreds of threads.

    I need some new and quick breakfast ideas. Its getting chillier here now and this morning I was craving a bowl of oatmeal ..... obviously not Atkins friendly ..... so I need some other warm-me-up ideas.
  • Eggs hardboiled, scrambled, fried, etc.

    And you can do bacon with them, or cut up veggies to mix in, or both, or put in salsa.

    I stick to eggs maily, so those are my main ones

    There's a crustless egg quiche recipe floating around this forum somewhere, sandyfanny seems to mention it a lot. Maybe she can give you more info
  • I make that crustless quiche and it's quick AND easy
    Basically I make 12 at a time, they store pretty well for a couple of days. Sandyfanny's might be different but here's what I do.

    Ingredients:
    12 eggs
    2 Tbsp. heavy whipping cream
    3 Tbsp. sour cream
    1/2 stalk of celery minced
    1/2 small onion minced
    1 c. shredded cheese (the 4 cheese mexican kind)
    1 jalepeno minced (with seeds)
    1 pkg. real bacon bits
    4 precooked sausage patties crumbled
    1 tsp. salt
    1 Tbsp. black pepper
    1 Tbsp. chili powder
    1 Tbsp. onion powder
    1 tsp. garlic powder

    I mix the HWC, eggs, and sour cream in one bowl, then add to the main bowl with all the other ingredients and mix well. Then I spoon into paper cupcake holders in my muffin pan. I spray the muffin pan with Pam before putting the paper cupcake holders in. I bake at 350 for 1 hour. The little quiches will have a nice golden brown color on top. Naturally, the jalepeno and chili powder give it a little kick I am experimenting with these this weekend. It will be something for Thanksgiving. I will let ya'll know how it turns out

  • I love the Sausage, Egg and Cheese Breakfast/Brunch quiche for breakfast. I make one on Sunday night and eat a nice big piece every morning for days...just pop it in the microwave until it's heated through. (1 min. or less) The recipe's on the "Recipes from 'What's for Dinner'" thread.
  • I have all the ingredients to make what you posted JerseyGirl, too bad I've already had my dinner! I'll have to try that one.
  • If you like breakfast burritos, I love to make breakfast burrito filling. I brown ground sausage (not links), then beat up eggs with heavy cream, salt, and pepper then pour it in with the sausage and mix it all up so the egg cooks onto the sausage. I then mix in a little bit of cheese and serve it in a bowl. Top it with whatever taco toppings you want, like more cheese, salsa, sour cream, jalapenos, pretty much anything. My aunt has made breakfast burritos for years since I was little and I have always loved them, so I like to be able to enjoy a variation of them without the tortilla.
  • I am going to experiment with that mock danish .... I don't have a microwave so will give it a go in the oven or in a saute pan.

    It was tasty enough and I think if I am having a major sweet craving this would fix it. But I got a little curious as to the nutritional facts of it. I entered the recipe into a site I use to decipher nutritional breakdown of my own recipes. Here what I found:
    One serving has 206 calories 133 from fat
    10 carbs
    4 grams dietary fiber
    7 grams sat. fat 0 trans fat
    243 mg of cholesterol
    164 mg sodium
    8 grams protein
    3 grams sugars
    13% Vit. A 13% Calcium 9% Iron
  • I LOVE mock danish in the morning. So easy and fast! I like to put some lemon flavored Stevia and coconut oil in mine. The coconut oil changes the texture and makes it more custardy on the inside and almost cakey on the outside. I have to be careful because I could easily eat nothing but these . I think they're just as satisfying as oatmeal. I love the lemon/coconut but I've been meaning to experiment with other flavors too .

    I also keep hardboiled eggs in the fridge at all times and sometimes if I have more time I'll just do an egg scramble with whatever veggies I have on hand and some cheese. yum yum!

    That doesn't sound right. I put one into Fitday last night and the carb count was closer to 2 or 3...
