Pesto Seafood Omelette

  • Made this this morning and YUM!

    1/4 cup minced onion
    1/8 cup minced celery
    1/8 cup minced green pepper
    2 large eggs
    1 tsp. pesto
    3/4 cup seafood ( shrimp or scallops or seafood mix or all three combined to make the 3/4 cup)
    2 tbsp olive oil

    Saute onion, celery and olive oil until onion is golden brown. Add green pepper and saute 1 minute. Add seafood and saute for 3-4 minutes depending on if you use frozen or fresh. Set aside. In a separate bowl, beat eggs and pesto together. In the same saute pan, cook mixture until 3/4 done. Put seafood mixture on half of the egg and fold over. Cook for 2-3 minutes. Makes 2 servings or 1 if you're really hungry!
