canned chicken???...

  • question - do any of you use canned chicken?

    i've found a few recipes that uses CANNED chicken - and i'm assuming it'd be just like using canned tuna (which i use all the time...) - but for some reason just the thought of chicken CANNED doesn't really appeal to me.

    But I thought I'd ask your guys' opinions on it - and what the best brand to use would be...
    I've seen it in the tuna aisle - but have never had the guts to try it - and it seems a LITTLE bit cheaper and faster to use than regular chicken or the chicken breast strips (which i love, but are expensive)

    one such recipe I've found that looks REALLY good is:


    Caribbean Chicken Salad (from www.mealtime.org)

    Ingredients:

    1 can (10 ounces) chunk white chicken in water, thoroughly drained
    1 can (8 ounces) pineapple chunks, thoroughly drained
    1/2 cup drained, canned water chestnuts, quartered
    1/3 cup sliced green onions
    3 tablespoons mayonnaise
    1 1/2 tablespoons minced gingeroot
    1 tablespoon fresh lime juice
    Salt and pepper, to taste
    2 papayas or 2 small melons, halved and seeded
    Lime or lemon wedges


    Preparation Time: Approximately 15 minutes

    Preparation:

    Toss the chicken, pineapple, water chestnuts and green onions.

    Mix the mayonnaise, ginger, lime juice and salt and pepper. Toss with the chicken mixture.

    Cut a thin slice from bottom of each fruit half to make a flat surface for plating; place halves on 4 serving plates. Mound the chicken salad in the fruit halves. Serve with lime or lemon wedges.

    Servings: 4

  • I use it quite a bit to make chicken salad with. I get the one that says white chunks of chicken breast. It's not very expensive and is quick and easy.
  • I use it in my white sauce enchilada recipe and for chicken salad.

    I know it sounds 'weird' but it is really just cooked chicken and packaged in water like the tuna.
  • I used canned turkey all the time, and occasionally canned chicken. It's good for the recipes where you mix stuff in, like the one you posted.
  • I use it all the time. In fact I had Chicken salad for lunch made with a can of chunk chicken breast

    I love to take a can of chicken broth, add some canned chicken breast with the juice, a little pasta of choice (or whatever is left in the cabinet) and add some frozen spinach to make my own wedding soup. Low cal/low fat and fiber from the spinach. A great meal.
