Hummus Salad Dressing

    This is from Engine 2, a fire station where a member was diagnosed with high cholesterol. Another member is the son of Cleveland Clinic Heart Surgeon Caldwell Esselstyn, known not only for fixing clogged arteries but also for helping to prevent them with changes in diet.     Ingredients:
    2 Tablespoons hummus
    1/2 lemon (or lime)
    1 Tbsp Balsalmic vineger
    salt and pepper to taste

    Directions:
    Mix hummus with juice from 1/2 lemon/lime and balsamic vinegar until it reaches the consistency you wish. Add salt and pepper to taste. It sticks to lettuce well.
  • I'm a regular at 3FC, but I found this page from a google search of hummus salad dressing recipe. I made some today (Easter) as a last-minute alternative dressing for our dinner salad, and it tastes divine. I used blueberry-balsamic vinegar and I can't wait to serve it. Thanks
