Looked all over for a recipe for chicken breasts done with a kind of lemon sauce - I saw several here (in the Phase I entrees), and finally decided on Souffle Stuffed Chicken. While not exactly what I was looking for, the recipe sounds delicious and quite easy! I will let you know how it turned out!!

I'll serve with a crisp green salad topped with thinly sliced red onions and home grown tomatoes.

Anyone have an idea for an additonal side (or are we being greedy)?

Sandy pointed me to a cooking discussion website which I will post here since I've checked it out.
I will be fiddling with the Greek Shrimp Broiled with Feta Cheese to make a smaller amount and will use low fat feta. I'll use whole wheat spaghettini and have a green salad. (This recipe is crying out for a glass of red wine so I may indulge.) Raspberries and ff vanilla yogurt for dessert.

I would probably serve something like steamed broccoli with the Spinach Souffle Chicken. I've made that several times but don't remember exactly what I served with it.

For tonight, I am having Ham, Zucchini, Asparagus pasta (ww penne). It has a sauce made with fatfree evaporated milk and parmesan cheese and has scallions. It is one of my son's favorite meals and is really easy.

Mmmmm. That sounds good. I'm trying to do this diet without having to cook separately for my husband, mom and two other daughters. So, I usually have something that I can add a potatoe or rice (or some sort of carb) to, without compromising myself and my older daughter. My husband really loves a creamy pasta sauce, so I will look this up! Sandyj

Oh goodness how I love the Spinach Souffle Chicken . Yum. I haven't made it in a while since the kids are so crazy at dinner time and I have to cook quick stuff. I think I will make this at my moms this weekend if we get to go. I like to serve it with some roasted/broiled artichoke hearts (from a box of frozen ones) and okra. Yummy with just a sprinkle of parm cheese over the top.

For tonight I actually have no idea. Usually I know in the morning but today I am just unmotivated to cook. I may have just a vegie plate and let dh finish off the meatball casserole. Kids want chicken nuggets and broccoli.

Lordy! It's only 3:30 and I'm hungry! Time for V8 and some other veggies with a bit of Laughing Cow! I'm staying out of here the rest of today!

I've never tried artichoke hearts (artichoke anything). Hopefully not as unworldly as that sounds. It's not something my mom ever cooked, and none of my relatives - although I come from a big "cooking" family.

Are they okay on Phase I?

Actually I saw a post about the souffle stuffed chicken and thought that sounded good but then I remembered I was going to make the meatball casserole tonight . I'm going to have baked white beans with cheese and basil and probably some steamed broccoli to go along with it. I may throw some artichoke hearts in the oven to finish off what little I have left in the bag.

Has anyone tried the Artichoke Chicken in the book? I keep meaning to but never get around to it.

You'll love the Souffle Stuffed Chicken, Sandy, it's soo good. It's my all time fav from the cookbook.

That souffle chicken recipe does sound good - hopefully my family will like it too.
So far I haven't found it too hard to cook for SBD - when in doubt, I stick to fresh ingredients, which isn't really a departure from my normal preferences. I have some fresh spinach, but I will pop in to the grocery store and by the Stouffer's frozen. Never had this before - if I know what goes into it, maybe next time I'll just give it a go and make it from fresh.

Yes, the artichoke chicken is very good...try the cheesey baked artickokes in the cookbook...they are fabulous!!
