Okay guys, what can I do with barley?????

  • I'm trying to eat different grains to keep things interesting (I usually just stick to rice) but besides adding barley to soup, I don't know what else to do with it. I made a big batch for the week but I'm stumped. Any ideas? Does anyone eat it for breakfast? How would you prepare it? Any yummy and easy ways to use this? Thanks!
  • There's a recipe for chicken with barley floating around here which is very popular. You have to cook the barley with the chicken, though, so it wouldn't work this week. How about some sort of casserole? I'm going to make tuna casserole tonight with brown rice, but barley would probably work, too.

    I'm not sure, but I think you need to be careful storing cooked grains for more than a couple of days. You could freeze some, I suppose, especially if it is in another dish or a soup.
