Chicken Cordon Bleu - Phase I

  • Chicken Breasts
    Canadian Bacon
    Reduced Fat Chedder Cheese
    Olive Oil

    ---------------------------------

    1. Using a sharp knife, slice a pocket in the "chubby" part of the chicken breast.

    2. Slice the bacon into small pieces suitable for stuffing.

    3. Fill the breast pocket with cheese and bacon. Secure with toothpick.

    4. Pan fry in olive oil with pan covered for 5 minutes. Turn chicken, then continue for another 4.

    Variations include:

    1. Skinny breasts? No problem! Pound them flat with a hammer and make a roll up! Works the same, tastes great.

    2. Really chubby breasts? Try doing multiple pockets!

    The kids in my home loved this as much as the adults did. Great meal, my own recipe....you can tell by the excruiating exact measurements!
  • I made these just the other night. As long as your pan is hot when you place them and you cover it for at least the first 5 minutes, you're good to go!
  • I made these baked and used swiss. They were amazing! I also used a side of fried onions and mushrooms and I almosted licked the plate!
