I tried the refried beans mixed with salsa lunch idea

  • Not my favorite meal in the world, but it works. I have all the fixins' here at work for my lunch today. Its quick and easy.

    I take the refried beans mix in some salsa and microwave. Put some FF cheese in a WW tortilla and plop some of the warm mixture on top. I make 2 for lunch.

    Thanks to everyone who posted those suggestions. It is something different and easy.
  • I had something similar for lunch on Monday. Delish! I only had one, though. I hate the small serving sizes for carbs...but I have to honestly say that with that and a salad, I was actually full.
  • Did you try it with the refried black beans or the regular refried beans? I like the black beans better. The other ones remind me of a little of dog food

  • Oh, boy. Then you'd better not try the other kind. This past weekend, I made some with my food processor and a can of black beans. For some reason the only kind I could find at the 2 stores I went to was the pinto bean variety...thought hmmm, it's just smashed black beans with spices. Can't be that hard. It was pretty good, I didn't smash them all, only about half and left the other half only partly smashed. It seemed to give it a little more texture.

    Anyway, think of all that fiber you ate. It's good for you! What was from the Conan movie? "What doesn't kill you, makes you stronger."
  • Honestly, I think that beans are the food of the angels! I LOVE refried beans...true comfort food for me! I had them in a hot WW tortilla, and just smiled and the comfort it gave me!

    Takes all kinds, I guess. Beans don't remind me of dog food at all. Now chili in a can...that does!
  • You could adapt this to phase one by serving it on a bed of lettuce (like a Wendy's taco salad).

    I thought about that when eating my lunch today. Even doing lettuce wraps. I was even thinking I could chop lettuce and put that in my WW tortilla for the greens.

  • Mmmmmmm. This sounds good. I just bought a tortilla press and thought that I would make my own tortillas. This thread is giving me more incentive all the time. Can hardly wait.
  • Peggy, let me know how that goes...I only know how to make them with masa (corn), not with flour.
