My Atkins Dessert

  • Sorry for the mulitple posts this morning!

    I was trying to be creative and think of something I really liked that would be "okay" during induction.

    This is what I came up with.

    Creme Brulee - minus the carmelized sugar. Here is what I did:

    4 eggs
    2 cups heavy cream
    dash salt
    12 packets of Splenda
    1 T Vanilla

    Mix together and bake at 325 for an hour in a water bath. This is
    sinfully rich and creamy. Obviously eaten in moderation b/c of the
    Splenda - but you could eat 1/4 of the bowl and still stay within the daily range for sweeteners!!

  • That does sound yummy. Have you posted it yet in our Low Carb Recipe section?
    BTW, you could even have your caramel topping if you can get DaVinci flavored sugar free syrups.

    I just posted it to the recipe section.

    I'll have to try that DaVinci flavored syrups. My husband used to deliver to the DaVinci syrup company... and pick up boxes of the syrups. He even got a large bottle of Vanilla free once because he's so good.
