Italian Zucchini Bake

  • This is so simple and easy to make. My daughter and I make a batch and it lasts a few days.

    Italian Zucchini Bake

    3 zucchini - seeded and sliced
    1# bulk Italian sauasage
    2 c. cheese
    Parmesan Cheese

    Put sliced zucchini in greased 13 x 9 pan. Cook and drain Italian sausage. Top with cheese. Bake 1 hour at 350. Or it can be microwaved until zuchhini is tender.

    You can use a variety of cheese if you like. The last time I made it I used pepper jack and cheddar. I also have made it with just Parmesan cheese.

    It heats very well in the microwave.

    now I changed the recipe a little bit
    I changed the sausage to italian turkey sausage (I don't eat pork, pork is bad for you)
    I added 1 1/2 c sugar free Delmont'e spaghetti sauce
    and cheese, I chose to use part skim reduced fat shredded mozarella ( kraft foods)
    and spray olive oil pam in the pan and on the zuc slices.

    Also try this with eggplant in place of zucs.
