Today I am making a pot of healthy gumbo (except for the salt).
1 Box Zatarains Gumbo Mix
3 Chicken Breasts (boneless skinless)
12 oz. okra
2 cans diced tomatoes
6 cups water
Its so easy, put everything in the pot and bring to a boil then reduce heat. After about 1/2 hour from the boiling point, pull the chicken breasts out and cool then shred and return to the soup. 200 calories a bowl, 1 grain (rice), 1.5 vegetables, and 2 ounces protein. Makes 8 hearty servings, and you have to add some more water to it once refrigerated because it thickens from the rice and okra.
