how to make vegs taste like fruit?

  • Hello all,
    Other than steaming zucchini and sprinkling with cinnamon and stevia, what are some other ways to make veggies taste like fruit?

  • I buy frozen rhubarb at my local Whole Foods. I put it in a bowl and microwave it for about 3 minutes. Then I put it in the blender with some WF blueberry or strawberry syrup (maybe 3 tbsp) and blend until its at a good consistency, really however you like it. I put it back in the bowl and sprinkle a packet of stevia over the top and BOOM. Tastes like fruit!
    One bag of Rhubarb is a cup and a half and it makes a good bowl full! YUM!

    Edit: I know there is a recipe out there where people used the oatmeal packet or the vanilla pudding packets and put it over the rhubarb and popped it in the oven. It turns it into a crumble. Sounds delicious

  • I bake my zucchini with a little WF apple butter and cinnamon and nutmeg over it.
    You could sprinkle stevia and cinnamon on your cauliflower roasted cauliflower. It would be sweet, but probably wouldn't taste like fruit.
  • Rhubarb is on my grocery list. I have never cooked with it, and only think of it in pie, with strawberries because it is so tart. Is it a vegetable or a fruit? I look forward to inventing things with it...
  • Rhubarb is a vegetable. There is also a recipe with the crispy cereal. It sounds good. I haven't made it yet because I can't find it anywhere. I am waiting for it to come in season.

  • Ah! Rhubarb! I forgot all about it. Mom used to serve stewed rhubarb frequently as a dessert when I was growing up. That would make me feel like I'm having a dessert after dinner. And for me at least, it's a good laxative... lots of fibre. Hope I can find some in the frozen food section on tomorrow's shopping trip. I was just thinking tonight how quickly I'm going through veggies... I always thought I was a decent vegetable eater, but these 2 cups at lunch and dinner are certainly meaning none of my veggies spoil these days.
  • When I make the Proti-Diet blueberry pancakes, I dice a bit of zuchinni and zap it in the microwave with WF blueberry syrup to make "blueberry" bits to add to the pancake. I have done the same thing using a squirt of mango/peach MiO to add to Health Smart Peaches N Cream oatmeal.
  • I've been thinking about soaking some cucumber spears in watermelon strawberry Mio...might try that tomorrow. Have to go buy more Mio. Might try the same w/ the tangerine Mio.
  • I sautee a bag of frozen rhubarb until tender and split it into 3 raspberry jellys (assembly line prep). After they are set I mix up a spoonful of WF marshmallow dip for creamy parfait.

    I also dice and sautee a peeled zuchini with splenda, cinnamon, & nutmeg for an apple substitute. This weekend I baked it with 2 egg whites and the powder from the crispy cereal @ 350 for 20min, the last 5 min I topped with the crispy cereal bits and WF caramel sauce for a caramel apple crisp. Just what my sweet tooth needed!
  • I need to get some Mio this weekend! I have no problem drinking H2O, but sounds like it can help my fruit fix!
