I made the zucchini baked apples last night and it was FANTASTIC! Will definitely be adding this to the rotation!

I always thought of rhubarb as a fruit too, I guess that's because I only have used it to make a strawberry rhubarb pie before. Like they say you learn something new everyday!

I forgot I had WF Apple Butter in my fridge (I bought a ton of it at first and have slowly figured out how to incorporate it into my diet)...I'll definitel try adding that into my zucchini apple bake!

Results of soaking cucumber spears in Mio (left overnight): Did this with the watermelon strawberry and tangerine. was very sweet - not fruit like - more like candy - perhaps I used too much Mio. However, it satisfied my sweet tooth and I used it as a late afternoon small snack. I am continuing this - like the variety - will finetune the preparation and report back.
