Summer squash question

  • How do you cook it?? Looking for new recipes. TIA for responses.

    Sorry I don't have a specific recipe for you. Many times I use the summer squash fresh in salads or as additions to various soups. In soups I find it a great way to add my veggies because they are so mild-they take on whatever flavors you are adding.

  • I love summer squash--I made some stuffed summer squash a few weeks ago that was so good. You can use any stuffing you would use for portobello mushrooms or peppers, or chicken breasts, or anything really. I just used some leftovers I had in the refrigerator. Cut the squash in half and steam it for a few minutes, then scoop out the seeds. I mixed some shredded chicken with arugula, chopped artichoke hearts, lowfat ricotta, some garlic and herbs and a little grated parmesan. Then piled it into the squash and topped it with a little more parmesan and some finely chopped walnuts. Baked it at 425 for 20 minutes or until the squash is nice and tender and the topping is brown. Turned out awesome!!
  • I love to run my summer squash or zucchini through my spiral slicer to make "spaghetti", then top it with marinara for a delicious and filling meal with very little calories.

    Another favorite way of eating it is to cut it in halves, brush with a little olive oil, top with feta cheese, and bake it. Yum!
  • I liek to slice mine thin, and dip in balasamic vinegar. Top with a mixture of parmesan, garlic, oregano, and just enough mayo to make it stick, and broil. So, so good.

    Also, I find the website foodblogsearch.com to be very useful when searching for recipes. They're not always healthy, but you can usually find a bunch that are.
