Amazing New Vegetable!

  • Has anyone ever tried Fennel? OMG! It is super good! I love it! I started putting it in with other veggies, I put it in the chile and it is awesome! I tolerate many other veggies but never found one I really like the taste of! Unless of course you cover them in butter and seasonings they are barely tolerable! But Fennel, it kind of has a sweet taste and a licorice kind of taste, but not too strong. It is definitely worth trying! It's kind of hard to find. Walmart didn't have it. I found it at Trader Joes. My coach told me about it.

    Roast it with turnips and a brushing of olive oil and sprinkle of salt.

  • I like it roasted or as a salad. It is also good tossed with olive oil, sea salt and, pepper then broiled or grilled.

  • Try roasting fennel with celery root - then pureeing the two together --serve it as a side to scallops or shrimp. Delicious -- Saute fennel with shrimp, olive oil and garlic - when the shrimp/fennel/garlic are cooked remove from the pan give a generous squeeze of lemon and some parsley...Ahhhmazing :-)-- I Heart Fennel

  • I tried it for the first time this weekend. It was good to add some flavor notes to my vegetable medleys.
  • I bought some last night just because of this thread and can't wait to try it tonight. Question though, when you roast it do you roast the bulbs and the stems or just the bulb?
  • Thanks for posting your discovery, GettingItOff!! I had actually been wondering about fennel but I don't even know what it looks like, lol. Perhaps I should google it! That's what I had to do for rutabaga and rhubarb. I'm glad this diet is forcing me to eat my vegetables....

    I've heard you can eat all of it but I'd probably just roast the bulb. I cooked some and honestly it is probably the only vegetable that I think tastes better raw. I can just eat it plain. When I cooked it I didn't like the taste or texture.

    You;re welcome. My coach is the one who told me about fennel. Did you like the rutabaga and rhubardb? How did you cook them?
  • I first had fennel when I was in London. I ate it in a quiche, but didnt know what it was until I was done. delish!

    I actually haven't made either one yet. I was trying to find recipes for the rutabaga, and I already know what I want to do with the rhubarb. I'll let you know what I think once I make it!
