I cut celery into thin strips and open up my little wedge of Laughing cow and dip/drag the celery through it. Very tasty and it takes a satisfying amount of time to eat that way.

Other raw veggies work too of course, but celery is my favorite.
Spread it on a slice of turkey, roll it up and cut it into bite sized pieces.
Melt it in the microwave with a little milk and serve it over steamed veggies for a yummy side dish. (With cauliflower it's almost like mac & cheese.)
It's good in omelets and scrambled eggs, too.
In later phases, it makes a mean quesadilla with a whole grain tortilla, and is very good with apple slices or carrot sticks. I avoid rice, but my daughter makes a quick lunch with brown rice, salsa and that new chipotle flavor.
What flavor did you get? I like the creamy swiss and garlic and herb the best.
