Last night, instead of having leftover chicken enchilada casserole, we went out to dinner and the only really suitable thing was catfish fingers, which I ordered. I thought I had blown it but when they arrived they were coated in cornmeal and had been baked, and then just toasted in a pan with a little oil, rather than deep fried. I was wondering whether cornmeal breading is acceptable on SB and would count as a carb? I'm confused about corn in general. Anyone able to enlighten me?
I think it's very limited on Phase 3, not allowed on Phase I or II. High Glycemic index.
