Something yummy you can do with the banana muffin...slice it into about 4 slices, lay the slices on a baking sheet, and bake at 400 degrees for about 10 minutes. It gets all warm and crispy and it's kind of like banana toast.
And the ham and swiss recipe is very flexible. You can do different flavors of ham (or use bacon) or different flavors of cheese or use different spices. Some variations I've done:
maple ham + smoked cheddar + finely diced apple + cinnamon + basil
peppered bacon + hot pepper cheese + parsley + sage + thyme
smoked ham + blue cheese + rosemary
bacon + provolone + sun dried tomatoes + parsley + oregano + basil
The ham and swiss muffins are great for when I need something quick I can take with me to the office to zap in the microwave for breakfast. Two of those plus applesauce or yogurt and I have a perfect meal.
