sugar free, fat free mini muffins!

  • The daycare kiddo's wanted to make muffins today. Baked goods are teh evil for me... so I took a fat laden, sugar laden muffin recipe and turned it into pure fat free sugar free awesomeness!!!!!

    They are moist and tasty too!

    edited to add that they are only 53 calories a piece

    4 medium banana's, mashed
    1 egg, beaten
    3/4 cup unsweetened applesauce

    *mix these together

    sift together:
    1.5 cups whole wheat flour
    1 tsp baking soda
    1 tsp baking powder
    1 tsp cinnamon
    .5 tsp salt
    dash vanilla extract

    add dry to wet... mix!

    Cook at 375 for 12 minutes. Makes 24 mini muffins!

    Try them. So good!
  • Mmmmmmmm I love muffins! I'll have to try that out and add some dried cranberries or other fruit. I am just a sucker for cranberry-cinnamon-bran muffins. Thanks for the recipe!

  • why would they be problematic for you RR? Is it because it's a baked good? Because they don't contain ANYTHING refined or that would set off cravings for me. I had two yesterday for snack. Two this morning with my yogurt and banana for breakfast and I don't crave them at all. They are just yummy and filling.

  • Does anyone know the protein grams in these? My DH is a diabetic and loves baked goodies. This has been a huge problem for with this transition for him. I have been trying to find something I can bake/buy him that has a significant amount of protein. Suggestions?
