Anyone had success with HG Onion Rings????

  • Ok maybe I'm having an off week, but I have tried three times to make the Lord of the Rings using Fiber One cereal from the Hungry Girl book and can't get the cereal to stick to the onion. What am I doing wrong!???

    Anyone make these successfully???

  • I've made these a couple times! You're using the egg-substitute right? I've never had a problem getting it to stick. I do use a fork to transfer the onion rings from the egg to the cereal to the pan. When it's in the cereal, I sometimes use a spoon to get all the areas covered. Maybe your rings are too big? I know that sometimes I have a harder time covering big rings!

  • Like, really, really fine. I put it in the blender and just let it go until there are no big pieces left!

    Thank you so much! Maybe that's the reason it wasn't working well. The recipe says "to a breadcrumb like" consistency and I didn't want to obliterate the cereal. Guess I will give it another whirl tonight. Into the blender on high it goes

  • I love these too! I make them all the time and ground up the fiber one until it is VERY fine. I also add in garlic powder, pepper, oregano, and chili powder. If you don't add extra spices the rings are too sweet.

    Ok I took everyone's suggestions and tried them again last night. I DID IT!

    They turned out great. I realized I wasn't grinding the cereal up enough. The only thing I will do differently next time will be to add even more extra spices.

  • Everyone made me Hungry for Onion Rings! I made them today. I Loved them! I added a little pepper & Cajun seasoning to my cereal crumbs. Then sprayed them lightly with Butter Flavor Pam. My Hubby is usually kinda finicky....he even ate half of them! Said they were Good!
    I felt Kinda Like I'd Cheated!

    AAAGH........those onion rings sounded soooo good I went right out this morning and bought the book. Didn't check to make sure the recipe was in it and went home. Needless to say it isn't. Lesson learned, always check before buying. Does anyone have the recipe?

    Lord of the Onion Rings 2.0

    PER SERVING (entire recipe): 155 calories, 1g fat, 515mg sodium, 41g carbs, 16g fiber, 7g sugars, 9g protein -- POINTSŪ value 2*

    Originally, we were pretty laid back about the amount of spices in this recipe. These days, we're not taking any chances. No one likes under-seasoned onion rings...


    Ingredients:
    1 large onion
    1/2 cup Fiber One bran cereal (original)
    1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
    1/4 tsp. garlic powder, or more to taste
    1/8 tsp. onion powder, or more to taste
    1/8 tsp. salt, or more to taste
    Black pepper, to taste

    Directions:
    Preheat oven to 375 degrees.

    Slice the ends off the onion and remove its outer layer. Cut onion into 1/2-inch-wide slices, and separate into rings. Set aside.

    Using a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Season the crumbs with spices and transfer to a plate.

    Fill a small bowl with egg substitute. Prepare a baking sheet (or two, if you have a lot of rings) by spraying with nonstick spray. Set aside.

    Pop-Up Tip! For this next step, try using tongs or a fork to dip the rings into the egg substitute and cereal crumbs -- it'll keep your fingers from getting eggy & crumb-covered. (Don't pierce the rings with the fork; just balance them on it.)

    One at a time, dunk each ring in egg substitute, give it a shake to remove any excess, and then coat it in the seasoned crumbs. Evenly place rings on the baking sheet(s).

    Bake in the oven for 20 - 25 minutes, carefully flipping rings over about halfway through. Enjoy!

    MAKES 1 SERVING

    HG FYI! You'll only need about 1/4 cup egg substitute to coat your rings, but using 1/2 cup makes it soooo much easier.

    I thumbed through it last night and there is quite a lot in the book that I intend to try . Tonight I am doing the "Fruity Fish Fillet Foil Pack". Since my husband is also losing weight (he's only about 30 pounds over) using the HG book will be easy. I find cooking for one much more difficult.

    If anyone does buy the HG book I don't think they will regret it. I am going to tweek some of the recipes to reduce the fat content.
