This is a tricky month so I thought a new thread would be in order.
My dinner tonight will be roasted cauliflower and sweet potatoes, spinach salad and a chicken breast done in the GF served with mango/lime salsa.

The plan was to have it in a veggie broth with chickpeas and spinach. I picked at it because I didn't want to throw it out, but I won't be buying that stuff again.
) I added about a cup of puree to the pan of mac, but I was trying to sneak it past the kids, so didn't want the flavor to be too strong. You could put more. I've seen recipes where they chunked it up instead of pureeing, so if you're not trying to fool a child, that's also an option.
