  • I want to make a meat loaf but I have never made one....lol i am getting bored with current menu selections so thought this would be a nice add
  • I have the 'Eat Shrink & Be Merry' cookbook at home and they have a really simple meatloaf receipe and one serving is 187 calories I believe. It's very good...I wish I had it with me and I could give it to you!
  • I like this one from Weight Watchers (I never manage to slice it into 12 portions, though - that's just not enough!!)

    Weight Watchers Meat Loaf 5pts

    3/4 c Ketchup
    1/4 c Minced onion
    2 tbsp. Chopped fresh parsley (dried)
    1 tbsp. Brown sugar
    1/4 tsp. Salt
    1/4 tsp. Pepper
    2 Large egg whites (1 egg white and 1 egg, to bind better)
    1 1/2 lb. Ground round
    1/2 c Quick-cooking oats
    Cooking spray

    Combine 1/2 cup ketchup, onion, and next 5 ingredients in a large bowl; stir well. Add meat and oats; stir just until blended. Shape mixture into a 8x4-inch loaf pan coated with cooking spray.

    Brush remaining 1/4 cup ketchup over meat loaf.

    Bake at 350 for 1 hour and 10 minutes or until done. Let stand 10 minutes before slicing.

    Cut into 12 slices (2 slices = 5 Weight Watchers points, or approximately 250 calories)
  • My favorite is making up turkey meatloaf, flattening it out on a sheet of waxed paper with a rolling pin or my palms, and then covering the surface with paper-thin slices of really good prosciutto (which I get from the Calabria Pork Store on Arthur Avenue, in the Bronx). Then I roll it up like a jelly roll & tuck in the ends & bake it. The prosciutto gives it a lot of flavor & yet you aren't really adding all that much fat per slice.
  • I like meatloaf, but I could never find a recipe I liked, so I collected a bunch of them and experimented. Here's the recipe I came up with; it's not too fattening, and it's awesome!

    Loafiness:
    2lb ground turkey
    2/3c bread crumbs
    1/2 package meatloaf seasoning, or dry onion soup
    2 eggs
    1 onion, chopped
    1/4c fresh parsley, finely chopped
    1/3 c celery, finely chopped
    1/2 red bell pepper, finely chopped
    2T minced garlic
    1/4 c grated parmesan
    1/4c ketchup
    11/2 t Dijon
    3/4t dried thyme
    1/2c milk
    1T Worcestershire

    Glaziness
    1/2c ketchup
    1/3c (scant) brown sugar (or sub Brown Sugar Splenda, tastes the same)
    1T Worcestershire
    1T HOT taco sauce

    Preheat oven to 375. Spray pan with PAM. Saute onion, celery, parsley, bell pepper, garlic, thyme until tender. Set aside to cool.

    Combine everything but meat and bread crumbs in a bowl and mix thoroughly.
    In a separate bowl, add meat and breadcrumbs, mix thoroughly.
    Mix everything together; spoon into loaf pan.
    Mix glaze ingredients, and pour over the top.

    Bake for 1 hour. Remove from oven, cover w/foil, and let stand at least 15 minutes.

  • I just use the recipe on the back of the Lipton soup mix. My problem is portion control!
  • Turkey+lean ground beef+cumin+salt/pepper+garlic+worcester sauce+ grated carrots+bread crumbs+egg+diced onions+diced celery= meat loaf.

    Ketchup to taste.
  • One i make, is really simple:

    1 lb ground turkey
    1 egg, slightly beaten
    1/2 c. oatmeal (quick oats)
    1/4 c. ketchup mixed in, then top with 1/4 cup after cooked
    1 small onion chopped
    I add green peppers too sometimes. Mix together , put in pan, and Cook at 375 for 40 minutes or so until done. The kids love it.

    You know, I've never attempted it, but I'm pretty certain I could finish an entire loaf in one sitting. It starts when you put it in the oven and you get the amaaaazing smell that fills the house.
  • I use a mixture of 93% lean ground beef and extra lean ground pork. I know alot of diet books advocate ground poultry, and while I do like turkey loaf for a change, the flavor for a beef loaf is, IMO, far better with the pork/beef mix.

  • This is how we make it, but I don't know the calorie count, because I haven't had to make it since we started counting.
    1 lb of hamburger
    sleeve of saltines
    mustard
    onions
    ketchup
    brown sugar-1/4 cup
    salt
    pepper
    put ketchup on top before cooking
    350* 40-45 minutes
  • I heard this one on the radio one day and it turned out pretty good:

    *Mix up some ground beef with eggs & bread crumbs

    *Pound it flat into a square shape

    *Layer it with some ham & cheese slices

    *Roll it up

    *Cook it in the oven at 350 degrees for 45 minutes or until cooked thru

    *Pour some tomato sauce on top & serve


    Yum! (Don't know the calorie count, but I'm sure it's not good!)
  • I love this recipe for Asian-Style Meat Loaves from Cooking Light. We're not fans of water chestnuts, so I sub finely diced celery for them and I use Trader Joe's Stir Fry Sauce in place of the Hoisin Sauce. It always comes out fabulous. Moist and very flavorful.
