Broccoli Soup

  • I found this soup recipe and it sounds good I'll try it tomorrow for lunch...however I'm gonna use chicken broth instead of veggie broth. and I'm gonna add a lil molly mcbutter and dash of garlic.

    Ingredients

    4 cups of chopped broccoli
    1/2 cup of chopped onions
    2 1/4 cups of fat free or low fat vegetable broth
    1/2 cup non fat milk
    black pepper to taste

    Directions

    In a large pot, add broccoli, onion and the vegetable broth. Bring to a boil. Reduce heat and simmer until the broccoli is tender. In a blender, pur�e the soup. Add the pur�e, milk and pepper, to the pot and heat approximately 5 minutes. Do not boil.

  • Ok i made it and its wonderful...i did add 3/4 cup of milk and I also added chopped celery (2 sticks) plus Mrs. Dash table blend and chicken broth instead of the veggie broth and also Molly McButter...

    Its really good!!!!

  • Finally made this tonight. So good! I didn't have celery but did add 3/4 cup of almond milk and a half a pat of butter. So yummy even my mom (who hates diet food) loved it. Thank you for this awesome alternative to a creamy meal!
