  • hi ladies I hope you all had a good week end. I had a come to Jesus meeting with my self yesterday and realised that I can't eat meat. It makes me sick I felt so bad yesterday. I think part of it was that I wasn't being true to myself and liveing that truth. I'm a vegetarian and it's my conviction health wise, enviormentally wise and humanly wise. and doing something because other people think you should does't work for me. wooo I feel a lot better.

    I have been a vegetarian for several years...recently, I started adding one or two servings of fish a week...I try to eat only those fish listed as sustainable on the Monterey site, so I don't feel too guilty about it...I just was feeling sort of low on the protein end...and I was afraid that I was eating too much soy...

  • Hi. I'm an almost vegan, though today I ate mostly junk that was easy to grab. Felt lousy, lithium must be low, they're still trying to get the level right. When it's low, I feel achy and fluish. Had a cookie energy bar and coffee, mock steak and roasted potatos, a fruit green smoothie, and a scoop of purely decadent with hot fudge. Worst day in a while, no supliments either. Blaaa! Do better tomorrow. At least if the lithium makes me gain weight I can eat healthy and work out. It's so hot here. I got a honeydew, and am looking forward to walking a mile tomorrow for my lunch, a pound of salad, it's great. Nice to meet you all.

    Oh well, at least if I buy a pint, I only get 1 serving because my DH eats most of it himself (and it has only 8 grams of fat per serving anyway).

    SoulBliss - I am in Manhattan....I love it too...How long have you been a vegan? I never could make the switch from vegetarian to vegan cause I love my yogurt and eggs too much!! I became a veggie years ago, in part for health reasons - I just felt better eating this way - but in recent years my decision has been mainly a result of the animal cruelty issue....that's why even when I eat fish (which I really do rarely), i try to eat things that are caught in a humane way...to the extent that is possible...and it is why I drink only organic dairy products and eat only eggs that are certified humane...Oops, didn't mean to go on so Everybody should do what makes them comfortable...this is just me...
    How do you like tempeh? It's the one meat substitute that I can't seem to abide, except in the tempeh bacon form, which is ok...
  • Hey, VeggieGirl. I like my tempeh curried in a sandwich, with veganaise, raisins or grapes, celery, etc. But some people hate it no matter what you do to it.
    I was singing in this bar about a month ago, when I struck up a conversation with this nice older guy. He was single, so, I gave him my number. In asking what interests we might share, he mentioned he liked to fish. I said something lame like, "Okay, you fish, and I'll bring my writing materials." I didn't have the guts to tell him I was a vegan. Know what, I think people who catch and release are even worse, because then they're just doing it for fun, but, all just my opinion. Need coffee, off to get my huge salad, then to rehearsal.

    I’ve had some stuff going on that has been wreaking havoc with my routine. Had friends in town over the weekend, they were doing some meetings with their wedding vendors so I of course had to go to the tastings with the caterer and bakery. They’re serving seitan mushroom stroganoff at the reception, it’s to die for. Between that and all the restaurants they wanted to eat at while they were in town (we all went to college here and there are so many good restaurants, it’s easy to eat your way through a weekend of nostalgia) I feel like I’ve been on a dairy bender. I think I need to go through cheese detox.

    That said all the food was delicious, time to get back to your regularly scheduled home-cooked healthy eats!

    Also, my car has been on the fritz since Sunday, (as it turns out there’s nothing really worng with it. Don’t get me started…) so dealing with that has been cutting into my workout time. Plus it’s been hot and a bit sticky out. Can you tell I’m a bit on the cranky side?

    My mission for the next two weeks is to get through my 5k race, the closing on our townhouse, a visit from the F-MIL, a work event that I’m organizing, wedding gown shopping, and keeping my sanity. If I can work time to cook and exercise in there that would be a super bonus.

    Hope everyone is doing well, glad to see newcomers to the thread!

    Purely Decadent - I've seen it, but not tried it. Now I'm craving it

    I've had a purely vegan week Though it's been a boring one. I'm going to go through my cookbooks this weekend and hopefully have a very imaginative and delicious next week

    Does anyone have a favorite cookbook to recommend?
  • Have you been to www.fatfreevegan.com yet it has some really good stuff. I even has an ETL section.

    ummmm but for cook books LAura's Kitchen is a must have and Vegan with a vengeace is good. I just take my favorites and make substitues.

    www.veganchef.com has some good recipes too, then there is www.vegweb.com, www.fatfreevegan.com and www.vegan-food.net

    I had a yummy sandwich tonight. I lightly sauteed strips of zucchini and smoked tofu. I cut slices of soy feta, chopped sundried tomatoes, and paper thin slices of sweet onion. I put my sandwich together with all of the above on lightly grilled bread. It was so good! Though it could have used fresh tomatoes, lettuce, and mayo
