ratatouille

  • My mom used to make this when I was a kid. It was always best with buttery noodles <sigh> but works well with rice too!

    Eggplant
    Yellow Squash
    Zucchini
    Green Pepper
    Onion
    minced Garlic
    Dried Oregano
    Dried Basil
    Dried Parsley
    Any other leafy spice like the above
    2-3 Can of stewed or chopped tomatoes

    Chop up all veggies and sauté in 1-2 tbsp. of olive oil with spices. Add tomatoes and simmer until veggies are done to your liking. Serve over 10min or instant brown rice.


  • Ooo sounds nice! The other week I made a variation of this substituting the passata/tomatoes for soy sauce/honey/chinese spice (ran out of tomatoes)...then stir fried in rice. V. yummy.
