recipe? I had it years ago and cant find it now.
I looked over the BFL website and they have others there but nothing with pineapple...could it be that one fruit was substituted for the pineapple? Sounds yummy regardless. If you ever find it I would be interested in it.

Pineapple cheesecake
32 reduced fat nilla wafer cookies, finely crushed
2 t. canola margarine, melted
4 scoops vanilla protein powder (72grams total)
1 sm box ( 4 oz. serving) of lemon sugar free jello
1 cup boiling water
2½ cups low fat cottage cheese
topping:
1 cup of canned crushed pineapple, drained
1 t. water
2 tsp cornstarch
combine wafers and melted margarine in a bowl. press into bottom of a 10" springform pan. set aside.
in a med bowl combine jello and protein powder, mix well. add boiling water and disolve mixture while stirring constanly for 2 minutes. set aside.
in blender, mix on high the cottage cheese, gradually add jello mixture to the blender while on. continue to blend until smooth and throughly combined.
pour into prepared crust, refrigerate serveral hours or until firm.
when firm heat crushed pineapple in juice in a sm sauce pan over med. heat. combine the water and cornstarch to make a sluree and add to pineapple. heat and stir until mixture comes to just a boil. remove from heat and cool completely, spread over cheesecake.
