Ok I’m going to clause this again with I’m sick and the doctor told me I had to cut most of the fat out my diet. I am really limited to the foods I can and cannot eat so that is not what I normally eat and I realize my calories are on the low side and hoping I will have more of an appetite then this.

B: Apple sauce
L: Beef vegetable barley soup from yesterday
D: Homemade chicken soup with whole wheat noodles.
S: I don’t know it’s going to depend on how I feel.

Last edited by RememberHowToSmile; 11-06-2006 at 12:22 PM. Reason: Because I came home for lunch and that changed my plan for the rest of the day.

L: (2 hours later) Ham sandwich, apple, string cheese

oh, it is! it's one of my favorites. I'm a big soup-maker.... I sent this recipe to a friend so I'll dig through my email and grab it for you... Here:

1 tbsp olive oil
2 c thinly sliced leeks (about 2 large)
2 tsp minced garlic
4 c small cauliflower florets
1 1/2 c peeled, cubed sweet potato
1 1/2 tsp curry powder
1 tsp ground cumin
4 c chicken or veg broth
1/2 tsp salt
1/4 tsp pepper
1 c cooked brown and wild rice blend
1 c evaporated 2% milk
1/2 c shredded light Swiss Cheese

-Heat butter in soup pot over medium heat. Add leeks and garlic. Cook and stir about 3 mins, until leeks soften.
-Stir in cauliflower, sweet potato, curry, and cumin. Cook and stir for 1 more minute. Add broth, salt, pepper. Bring to boil. Reduce heat to low, cover, and simmer for 12-15 minutes, until veggies are tender.
-Transfer half the soup to a blender and puree until smooth. Return pureed soup to pot with remaining soup and mix well. Stir in cooked rice, milk, and Swiss cheese. Heat soup for 1 more minute, serve hot. Makes 8 servings.

142 cal | 3.7 fat | 8 prot | 20 carb | 3 fiber

I usually omit the cheese and put some xlean ground turkey in instead. It's an awesome soup!!
