Default Homemade Lentil Soup - Phase One

2 cups lentils
1 cup chopped onion
1 cup chopped celery
3/4 cup chopped carrots
3 tablespoons fresh snipped parsley
1 clove garlic
2 1/2 teaspoons salt
1/4 teaspoon pepper
1/2 teaspon dried oregano
1 1lb can diced tomatoes (prefer. organic)
3 tablespoons white wine vinegar

Rinse lentils, drain, and place in soup kettle. Add 8 cups water and remaining ingredients, except tomatoes and vinegar. Cover and simmer 1.5 hours. Add tomatoes and vinegar. Cover and simmer 30 minutes.

This makes a LOT of soup, so be prepared to eat lots!

I am having this for supper and probably the next and the next. It makes a lot of soup! Thats a good thing because its good. I would be starving if it wasnt for Jennes recipies.Thanks!
