Default Plain potatoes?

The only healthy potatoe is the plain baked potatoe? I have been trying to find some lower cal recipies other than mashing them plain, or baking and eating plain. I love mashed potatoes w/lots of butter, milk and salt. But I am finding they are too many calories that way. Any suggestions or alternatives? Without the fat free ranch idea.. I hate ranch lol.

Edit ~ Oops I just realized that I posted this in the wrong spot sorry!

I like to sprinkle cubed potatoes with garlic powder, onion powder and dill and then either steam them or wrap them in foil and bake (use cooking spray on the foil).

salsa is really good on baked potatoes and I believe is only about 10 calaries and no fat.

Non-fat cream cheese is great on baked potatoes. 15 calories per tbsp. I often use non-fat cream cheese as a substitute for butter (on toast, stirred into polenta, etc.)

Lately I have been seasoning my baked potatoes with cajon seasoning. It is similar to salt, but spicier (sort of like Lawry's seasoned salt). You can find it in the spice section of the grocery store.

Salsa would be good, too. I'll have to try that!

Or mash them with some turnips and a little fat-free chicken broth (only 5 calories per cup). The turnips have a little more flavor than the potatoes so they'll add some depth to the dish. You could also add garlic.

Thinly slice a potato and spread it out on a dish. Put on 1 T. of salsa and a bit of green onion and microwave a few minutes until potatoes are soft. Grate 1 T. of low fat cheese. Put on top of potato and microwave 30 seconds to melt the cheese.

I put green onion on my baked potato and 1 or 2 tsp bacon bits, salt and pepper. My bacon bits are 10 calories a tsp.

I make fries by Pam spraying a dish and baking in oven. I use Seasoning Salt on them

Or I do the fries with low cal french or ceaser dressing

Boil taters in chicken broth, and mash with salt, pepper, onion powder and garlic - or a little ranch dressing dry mix (I buy it in bulk and make my own fat free ranch dressing with it, and use it for seasoning lots of stuff).

Another wonderful way to make potatoes is to take enough red or yukon gold potatoes for 3 - 4 servings. (cut into quarters if they're not small) and put them in a ziploc bag with 2-3 teaspons of of oil. Shut the bag and shake it all around until the potatoes are completely moistened (instead of using oil, you can spray cooking spray on them until they're moistened and then put them into the bag). Then add the ranch dressing mix, or your own blend of seasonings and shake til coated. Poar in baking pan and put into a preheated oven t 450 degrees. Bake til taters are tender (depending on the size of the chunks it can take 20 - 45 minutes).

The roasted potatoes are my husband's absolute favorite. Sometimes I cut the taters into wedges, slices, or strips. They're excellent when you're having a craving for fries.

I also love sweet potatoes - baked whole or roasted like french fries. They are my absolute favorite, they get so sweet when baked in the oven.

Thinly slice the potatoes, coat them with seasonings, and put them on a foiled sprayed cookie sheet; bake in the oven. They are great.

I also love sweet potatoes... the light yellow ones. Peel and cut into large chunks and boil for a few minutes to get them started. Then put on sprayed foil on cookie sheet or pie pan, coat with olive oil, add fresh salsa and chopped red oinion and bake. YUM.

I put fat-free cottage cheese on baked potatoes instead of sour cream.

Use fat-free butter spray or the Smart Beat squeezable spread

I like fat-free sour cream, garlic, onion powder, fat-free cheddar cheese, and sometimes a sprinkle of fat-free bacon bits
